  1. Cooking Tips: Did you add too much salt in the curry? No worries.. It is easy to adjust it..

    No matter what the cooking is, if the salt and pepper are right, its taste will enhance. Only then can we eat it. It tastes good to our tongue. You can't even put a dish without salt in your mouth. If salt is added in excess through oversight while cooking, it cannot be eaten without hurting the tongue. Sometimes due to small mistakes, the dishes end up with too much salt. We can stand a little more salt but not too much. Such situation ends up in a dilemma as we cannot eat the food nor can we throw it away. These simple tips are useful for such situations:

    Raw Potato slices

    Potato slices can absorb salt within minutes. 

    Mashed Potatoes

    Potato is a good solution when the curry is too salty. You can reduce the salt in the curry with potatoes. For this, peel the boiled potatoes and mash them. Adding it to salty vegetables reduces the taste of salt and makes the curries tastier.

    Tomatoes

    Adding some chopped tomatoes or tomato juice/sauce. The natural acidity of tomatoes balances the saltiness. If you want, try this tip whenever you have too much salt in the dishes at home.

    Add an Acidic ingredient

    A squeeze of lemon juice, vinegar, or tomato product can neutralize saltiness without reducing the sodium level. Start with a small amount, stir, and taste before adding more. However, too much acid can make the dish taste sour.

    Mask the flavor with Fat

    Creamy ingredients like heavy cream, cream cheese, cheese, or mashed avocado can reduce saltiness by increasing the fattiness of the dish.

    Yoghurt (Curd)

    In general, many people like to eat yogurt. Yogurt benefits our health in many ways. Using curd can reduce excess salt in the curry. For this, if there is too much salt in the curry, add one or two teaspoons of curd and mix it well.

    Bread

    You can also use bread pieces to reduce the salt in the curry. Bread pieces absorb salt just like potatoes.

    Coconut Milk

    You can use coconut milk to reduce the salt. Coconut milk also reduces excess salt in dishes.

    Jaggery or Sugar

    Add a small amount of jaggery or sugar to the salty curry to balance our flavors and reduce the taste of salt. For example, you can add half a teaspoon of sugar along with white vinegar. The taste doesn't change much either. But if you add too much jaggery/sugar, you will not be able to eat that curry!

    Dilute with Water or Unsalted Broth

    Adding more liquid can make the dish taste less salty.

      Egg Dum Biryani is a delightful variation of the traditional biryani, where hard-boiled eggs are layered with fragrant basmati rice and aromatic spices. Here's a recipe to make Egg dum biryani:
      Ingredients
      For Marination:
      6 hard-boiled eggs, peeled and slit 1 cup plain yogurt 2 tablespoons ginger-garlic paste 1 teaspoon red chili powder 1/2 teaspoon turmeric powder 1 teaspoon biryani masala powder 1 teaspoon garam masala powder 1 teaspoon coriander powder Salt to taste Juice of 1 lemon For Rice:
      2 cups basmati rice, washed and soaked for 30 minutes 4 cups water 4-5 green cardamom pods 4-5 cloves 2-inch cinnamon stick Salt to taste For Biryani:
      3 onions, thinly sliced 3 tomatoes, chopped 2-3 green chilies, slit 1/2 cup chopped fresh coriander leaves (cilantro) 1/2 cup chopped fresh mint leaves 1/2 cup ghee or oil 2 tablespoons ghee or oil for frying onions 1 teaspoon cumin seeds A pinch of saffron strands (optional) 2 tablespoons warm milk (if using saffron) Fried onions for garnish (optional) Instructions
      Marinate the eggs:
      In a large bowl, mix together yogurt, ginger-garlic paste, red chili powder, turmeric powder, biryani masala powder, garam masala powder, coriander powder, salt, and lemon juice. Add the boiled eggs to this marinade, ensuring they are well coated. Let them marinate for about 30 minutes. Prepare the rice:
      In a large pot, bring water to a boil. Add soaked and drained rice along with whole spices (cardamom, cloves, cinnamon) and salt. Cook until the rice is 70-80% done. Drain the rice and set aside. Prepare the biryani:
      Heat ghee or oil in a large heavy-bottomed pan or pot. Add sliced onions and sauté until golden brown. Remove half of the fried onions and set aside for garnish. In the same pan, add chopped tomatoes, green chilies, coriander leaves, and mint leaves. Cook until the tomatoes are soft and oil starts to separate. Add marinated eggs to the pan and cook on medium heat for a few minutes. Remove from heat. Assemble the biryani:
      In a heavy-bottomed pot, spread a layer of cooked rice evenly. Top it with a layer of cooked egg masala. Repeat the layers until all the rice and eggs are used up, ending with a layer of rice on top. Sprinkle the reserved fried onions on top. If using saffron, dissolve it in warm milk and drizzle it over the rice layers. Cover the pot tightly with a lid or aluminum foil. Place it on a very low flame or tawa (griddle) and let it cook for 15-20 minutes on dum (slow cooking) until the rice is fully cooked and flavors are well infused. Adjust spices according to your taste preferences. Once done, gently fluff up the biryani with a fork, mixing the layers lightly. Enjoy your flavorful egg dum biryani! Serve hot with raita (yogurt dip) or salad.

      ఒక పెద్ద పాత్ర లేదా కడాయిలో నూనె లేదా నెయ్యి వేడి చేసి, ఆవాలు, మెంతులు వేసి వేయించండి. ఆవాలు చిటపటలాడిన తర్వాత ఉల్లిపాయలు, పచ్చిమిరపకాయలు వేసి, ఉల్లిపాయలు పారదర్శకంగా మారే వరకు వేయించండి. టమోటాలు వేసి, మృదువుగా అయ్యేవరకు వండండి. ముక్కలుగా కూరగాయలు వేసి, కొన్ని నిమిషాలు వండండి. చింతపండు రసం, ఉప్పు, బెల్లం (ఉపయోగిస్తే) వేసి కూరగాయలు మెత్తగా అయ్యే వరకు మరిగించండి. 5. సాంబారు పొడి వేయడం:
      సిద్దం చేసిన సాంబారు పొడిని కలిపి, రుచులు కలిసే వరకు రెండు నిమిషాలు వండండి. 6. వండిన కందిపప్పు కలిపి:
      మెదిపిన కందిపప్పును కలిపి, కావలసినంత నీళ్లు వేసి మరిగించండి. 7. సాంబారు పూర్తి చేయడం:
      కరివేపాకు, చిటికెడు ఇంగువ (ఉపయోగిస్తే) వేసి, కొన్ని నిమిషాలు మరిగించండి. 8. కొత్తిమీరతో అలంకరించి మంట ఆపండి.

      Sambar is a delicious South Indian dish made with lentils, vegetables, tamarind, and a unique blend of spices. Here's a traditional recipe for making sambar:
      Ingredients:
      For Sambar Powder:
      2 tablespoons coriander seeds 1 tablespoon cumin seeds 1 tablespoon chana dal (split chickpeas) 1 tablespoon urad dal (split black gram lentils) 1 teaspoon fenugreek seeds 4-5 dried red chilies (adjust to taste) 1/2 teaspoon whole black peppercorns 1/2 teaspoon mustard seeds 1/4 teaspoon turmeric powder For Sambar:
      1 cup toor dal (pigeon peas), rinsed and soaked for 30 minutes 2 cups mixed vegetables (such as carrots, potatoes, drumsticks, eggplant, pumpkin), chopped 1 small lemon-sized ball of tamarind, soaked in warm water 2 tomatoes, chopped 1 onion, chopped 2-3 green chilies, slit 1 tablespoon jaggery or sugar (optional) A handful of fresh curry leaves 2 tablespoons oil or ghee 1 teaspoon mustard seeds 1/2 teaspoon fenugreek seeds A pinch of asafoetida (hing) Salt to taste Fresh coriander leaves for garnish Instructions:
      1. Prepare the Sambar Powder:
      Dry roast coriander seeds, cumin seeds, chana dal, urad dal, fenugreek seeds, dried red chilies, black peppercorns, and mustard seeds in a pan until fragrant and lightly browned. Allow the roasted spices to cool, then grind them into a fine powder along with turmeric powder. Set aside. 2. Cook the Toor Dal:
      Pressure cook the soaked toor dal with enough water until soft and mushy. Mash the cooked dal well and set aside. 3. Prepare the Tamarind Extract:
      Soak the tamarind in warm water for about 15 minutes. Squeeze the tamarind to extract the juice and discard the pulp. 4. Make the Sambar:
      In a large pot or kadai, heat oil or ghee over medium heat. Add mustard seeds and fenugreek seeds. Let them splutter. Add chopped onions and slit green chilies. Sauté until onions turn translucent. Add chopped tomatoes and cook until they turn soft and mushy. Add the mixed vegetables and cook for a few minutes. Pour the tamarind extract into the pot. Add salt and jaggery (if using). Let it simmer until the vegetables are almost cooked. 5. Add the Sambar Powder:
      Stir in the prepared sambar powder and mix well. Cook for a couple of minutes to allow the flavors to blend. 6. Add Cooked Toor Dal:
      Add the mashed toor dal to the pot and mix well. Adjust the consistency by adding water if needed. 7. Finish the Sambar:
      Add fresh curry leaves and a pinch of asafoetida (hing) to the sambar. Let it simmer for a few more minutes until the flavors meld together. 8. Garnish with fresh coriander leaves and remove from heat.
      Adjust the spice levels and consistency according to your taste preferences. Your delicious and aromatic sambar is ready to be served! Enjoy it hot with steamed rice, idli, dosa, or any South Indian delicacy of your choice.
