Egg Fried Rice recipe

Here's a simple and delicious recipe for egg fried rice:

Ingredients:

  • 2 cups cooked rice (preferably leftover rice, chilled)
  • 3 eggs, beaten
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • 2 green onions, thinly sliced (for garnish)
  • Sesame oil (optional, for flavor)

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add beaten eggs to the skillet and scramble them until cooked through. Remove the scrambled eggs from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Add diced carrots and frozen peas to the skillet. Stir-fry for a few minutes until the vegetables are tender.
  5. Add the cooked rice to the skillet. Break up any clumps of rice with a spatula and stir-fry with the vegetables until heated through.
  6. Drizzle soy sauce and oyster sauce (if using) over the rice mixture. Stir well to combine and evenly distribute the sauces.
  7. Return the scrambled eggs to the skillet. Stir-fry everything together until well mixed.
  8. Season the fried rice with salt and pepper to taste. If desired, drizzle a little sesame oil over the rice for added flavor.
  9. Garnish the egg fried rice with sliced green onions.
  10. Serve hot as a main dish or as a side dish alongside your favorite Chinese or Asian-inspired meal.
