Making a birthday cake from scratch can be a delightful experience. Here's a basic recipe for a simple vanilla birthday cake:

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar or lemon juice)
  • 2 teaspoons vanilla extract

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2-3 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract
  • Food coloring (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a large mixing bowl, beat the softened butter with an electric mixer until creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large mixing bowl, beat the softened butter with an electric mixer until smooth and creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Add the milk or cream and vanilla extract, and beat until light and fluffy. If desired, add food coloring to achieve the desired color.
  9. Once the cakes are completely cooled, place one layer on a serving plate or cake stand. Spread a layer of frosting over the top of the first layer. Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
  10. Decorate the cake with sprinkles, candles, or any other decorations of your choice.
  11. Refrigerate the cake for at least 30 minutes before serving to allow the frosting to set.
  12. Slice and serve the birthday cake to celebrate!
